Our story

A bakery named for the quiet sky at dawn.

Sora (空) means sky in Japanese — that particular pale blue of the early morning, when the kitchen still smells of warm butter and the day hasn't quite begun. That moment is what Sora Bread House is built around.

We bake shio pan (塩パン) — Japan's beloved buttery salt bread — using methods learned slowly and ingredients chosen carefully. Each roll is shaped by hand, proofed unhurriedly, and baked until the bottoms turn deep amber and crisp.

Operated as a Massachusetts cottage food residential kitchen in Stoughton. Small batches. Made with intention.

What makes a shio pan different?

Shio pan — literally "salt bread" — is a Japanese bakery staple that became quietly legendary. A cold baton of butter is wrapped inside lean dough, salt is sprinkled across the top, and as it bakes the butter renders out and fries the bottom into something extraordinary.

A buttery hollow inside.

The butter baton melts as the bread bakes, leaving a soft, glossy cavern that catches crumb and aroma. The interior stays light and chewy.

A crisp, golden bottom.

Butter pools at the base of the pan and effectively fries the crust as it bakes. The result: shatter-crisp on the bottom, soft and pillowy on top.

Flaky salt on top.

We finish each roll with flaky sea salt before baking. It seasons the surface and balances the sweetness of slow-fermented dough.

Pre-orders are accepted Monday through Thursday via our Square online menu (link in the Order section above). Choose your flavors and box size (4, 6, or 8 rolls), pay through Square, and pick up Sunday in Stoughton. You'll get a confirmation with the exact pickup address and time window after you order.
All pickups happen on Sundays in Stoughton, MA. The exact address and your pickup window are shared after your order is confirmed. Bread is bagged, labeled, and ready — no need to knock if you're using porch pickup.
Shio pan is at its best the day it's baked — the crust is crispest within a few hours. For day-two enjoyment, wrap loosely in a paper bag at room temperature. To revive, warm at 300°F for 5–7 minutes wrapped in foil. They also freeze beautifully for up to a month.
Yes! Every box can be any combination you want — four classics, a mix of all four flavors, three matcha and one red bean, whatever sounds good. You'll choose your mix on Square at checkout.
All shio pan contain wheat, butter (milk), and yeast. The chocolate variant contains additional dairy and soy. The red bean variant contains soy. Our home kitchen also handles eggs and tree nuts — cross-contact is possible. Full ingredient lists are included with every order.
Not currently. Shio pan is a freshness-driven product, and shipping doesn't do justice to the crust. We offer local Sunday pickup in Stoughton, with farmers markets to come.
